Southwest Potato Stacks

3-4 Large All Blue Potatoes

1 Tbsp Garlic Butter

2 Tbsp mild taco seasoning

Olive Oil Spray

1/2 Cup Shredded pepper jack cheese

Chipotle Dressing

Ranch Dressing

Fresh Charo Chives

•Thin slice 3-4 large All Blue potatoes with knife or mandolin

•Add potatoes to a large bowl with melted garlic butter & mild taco seasoning

•Mix well evenly coating each slice

•Spray cupcake baking pan with olive oil spray

•Add 1tsp shredded pepper jack cheese in each cupcake slot

•Layer All Blue potato slices in each slot to the top

•Top potatoes with more cheese (fill it)

•Bake uncovered at 400F for 35-45min, until crispy & golden

•top with chipotle, ranch, & chives
