Cheesy Bacon & Beef Stuffed Potato Pancakes
Ingredients
Potato Dough
- 3 medium Organic Caribou Russet potatoes peeled and cut into chunks
- 1 tsp salt (plus extra for the boiling water)
- ½ tsp black pepper
- ½ cup all-purpose flour
Filling
- 2 Tbsp butter
- ½ lb ground beef (80/20 for flavor)
- 4 slices bacon, cooked crisp and crumbled
- 1 small Organic Valencia Onion, finely chopped
- 1 cup shredded sharp cheddar cheese (or a mix with mozzarella for extra melt)
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper to taste
- Optional: a dash of Worcestershire sauce or hot sauce for kick
For frying
- 3–4 Tbsp butter
To serve
- Sour cream
- Chopped green onions or chives
- Extra crumbled bacon
- Ketchup or hot sauce on the side
Instructions
- Boil the potatoes Place potato chunks in generously salted cold water. Bring to a boil, simmer 15–20 minutes until very tender. Drain well, let steam dry a minute, then mash smooth. Cool for 10 minutes.
- Make the potato dough Mix mashed potatoes with 1 tsp salt, ½ tsp pepper, and flour. Knead into a soft, non-sticky dough. Add a touch more flour if too wet, or a splash of milk if too dry. Set aside.
- Cook the filling In a skillet over medium heat, melt 1 Tbsp butter. Add onion and cook 3–4 minutes until soft. Add ground beef, breaking it up, and cook until browned (5–7 minutes). Drain excess fat if needed. Stir in garlic powder, paprika, crumbled bacon, and seasonings. Remove from heat, mix in the shredded cheese—it'll get beautifully melty. Let cool slightly for easier handling.
- Assemble the pancakes Take a golf-ball-sized scoop of potato dough (2–3 Tbsp). Flatten into a 3–4 inch disc. Spoon 1–2 Tbsp filling in the center. Fold edges over, pinch to seal tightly, then gently flatten to ½-inch thick patty. Repeat.
- Fry 'em up crispy Heat butter/oil in a skillet over medium. Fry pancakes in batches, 3–5 minutes per side until deep golden brown and crisp. Drain on paper towels.
Serve hot and loaded Top with a dollop of sour cream, green onions, and extra bacon bits. These are killer for breakfast, brunch, or dinner alongside eggs or a simple salad.
